How exciting to start the weekend with a great breakfast and writing my first ever blog!
Given that I am a complete stranger to all of you lovely people, its only fair that I properly introduce myself. I am Corina aka ‘The Jam Goddess’.
I am completely passionate about nutrition and healthy eating for two reasons:
1) Your body needs certain nutrients to function properly
2) I am also intolerant to gluten, dairy, nuts and wheat and hence need to read pretty much every label when I go grocery shopping to make sure the products I buy are ‘safe’ for me to eat.
As you can imagine, it makes life just a little bit harder and if you know someone in your family or your circle of friends with food allergies or intolerances, then you know what I am talking about.
Anyway, I am digressing. I was going to tell you about what is fast becoming my favourite breakfast! Quinoa coconut porridge… YUM
It’s tasty and nutritious and keeps you full until lunch time which is always a bonus as the hours between breakfast and lunch can be looong
Here is the recipe:
1 cup of quinoa (serves 2 people)
1 cup of rice milk
1 cup of coconut milk
2-3 tbsp of coconut yoghurt per person
Boil the quinoa with the rice & coconut milk until soft (soaking it overnight will speed up the cooking process but I forgot ?)
Portion the cooked quinoa into bowls and add the coconut yoghurt. Mix well and it’s ready to enjoy. I added 2 tsp of our sugarfree strawberry & raspberry jam and it was delicious.
